| dc.description.abstract | A entomofagia, praticada tradicionalmente no Oriente, é uma alternativa nutritiva e sustentável para garantir o aporte proteico da população mundial futura. No Ocidente, insetos são utilizados na alimentação animal havendo interesse em introduzi-los na alimentação humana. Embora promissores, a baixa familiaridade e a associação com medo ou nojo, dificulta a aceitabilidade. Contudo, espera-se que gradativamente ao conhecer os benefícios de consumi-los, a disposição do consumidor para experimentá-los aumente. A tese objetivou produzir biscoito adicionado de farinha de grilo-preto – FGP - (Gryllus assimilis) que fosse aceito pelo consumidor. Assim, cinco estudos foram realizados. O primeiro, avaliou a percepção do consumidor por biscoito adicionado de farinha de inseto (BAFI) usando quatro estímulos diferentes. O segundo explorou o efeito de mensagens hedônicas e de saúde combinadas ou não com imagens do biscoito na intenção de compra de BAFI modulada pela neofobia alimentar e a sustentabilidade. O terceiro, produziu seis formulações de biscoito de chocolate contendo 0% (controle), 1,5%, 3%, 4,5%, 6% e 12% de FGP e avaliou a aceitação, descrição sensorial e associações emocionais considerando duas condições (participantes informados sobre benefícios nutricionais vs sem informação). O quarto, examinou como a modalidade da mensagem (com vídeo informando a existência de produtos comerciais com farinha de inseto vs. sem vídeo) e os atributos de embalagem infuenciaram as escolhas dos consumidores por BAFI. Finalmente, os seis BAFI e a FGP foram avaliados quanto às características físico- químicas, microbiológicas e digestibilidade in vitro. Os resultados do 1o estudo revelaram que nas associações de palavras o estímulo nutricional favoreceu maior número de menções positivas, como “hedônico positivo”, “saúde” e “nutrição”. Utilizar imagem com a mensagem aumentou marginalmente a intenção de compra por BAFI; porém, em consumidores neofóbicos, a intenção de compra foi reduzida. Consumidores expostos à mensagem de saúde foram mais inclinados em adquirir BAFI e tenderam a considerar mais sustentável o consumo de insetos. Marca e segurança foram os atributos mais significativos na escolha de PFI em ambas as condições (com e sem vídeo). O biscoito com 3% de FGP alcançou melhor aceitação sensorial. Seis atributos sensoriais foram significativos na condição não informada (ex., sabor de chocolate, crocante) e duas respostas emocionais (feliz, insatisfeito). Na condição informada, foram significativos dez atributos sensoriais (ex., sabor de chocolate, aroma amanteigado) e duas respostas emocionais (satisfeito, insatisfeito). As análises microbiológicas atenderam aos padrões da ANVISA e EFSA. O teor proteico na FGP foi 41,25g/100g e 9,01g/100g de fibras, enquanto nos biscoitos variou de 7,87 a 11,37 g/100g para a proteína e de 4,38 a 5,26g/100g para as fibras. A digestibilidade proteica foi de 40% na FGP e variou de 69% a 43% nos biscoitos. Os ácidos graxos predominantes na farinha e nos biscoitos foram: palmítico, esteárico e oléico. Concluiu-se que utilizar mensagens nutricionais foi mais efetivo para aumentar a aceitação, a intenção de compra e reduzir percepção de atributos indesejáveis em biscoitos. Mensagens de segurança e sustentabilidade devem ser mais exploradas em PFI. Os biscoitos mostraram ter viabilidade tecnológica. | pt_BR |

| dc.description.abstractOther | Entomophagy, traditionally practiced in Eastern countries, represents a nutritious and sustainable alternative to ensure adequate protein intake for the future global population. In Western countries, insects are mainly used in animal feed, however there is increasing interest in their introduction into human diets. Despite their promising potential, low familiarity and associations with fear or disgust hinder acceptance. Nevertheless, it is expected that, as knowledge about the nutritional, functional, and sustainability benefits of insect consumption expands, consumers’ willingness to try these products will gradually increase. This thesis aimed to produce chocolate biscuits added of Jamaican Field cricket flour (JFCF – Gryllus assimilis) that would be accepted by consumers. Thus, five studies were conducted. The first assessed consumer perceptions of biscuit added with (BAIF) using the word association method and four different stimuli. The second investigated the effects of hedonic and health-related messages, combined or not with product images, on purchase intention for BAIF, considering the moderating role of food neophobia and perceptions of sustainability. The third produced six biscuits formulations containing 0% (control), 1,5%, 3%, 4,5%, 6%, and 7,5% of JFCF and evaluated consumer acceptance, sensory description, and emotional associations under two conditions: informed and uninformed participants regarding nutritional benefits. The fourth examined how message modality (with a video informing consumers about the existence of commercial products containing insect flour versus no video) and packaging attributes influenced consumer choices for BAIF. Finally, the JFCF and the six biscuits formulations were evaluated for their physicochemical and microbiological characteristics, and in vitro protein digestibility. Results showed that, in word association tasks, nutritional stimuli elicited a greater number of positive mentions, such as “positive hedonic,” “health,” and “nutrition.” The use of images combined with messages marginally increased purchase intention for BAIF; however, among neophobic consumers, purchase intention was reduced. Consumers exposed to health-related messages were more inclined to purchase BAIF and tended to perceive insect consumption as more sustainable. Brand and safety were the most significant attributes influencing consumer choice of insect-based products under both conditions (with and without video). The biscuit containing 3% of JFCF achieved the highest sensory acceptance. In the uninformed condition, six sensory attributes (e.g., chocolate flavor, crispiness) and two emotional responses (happy, dissatisfied) were significant. In the informed condition, ten sensory attributes (e.g., chocolate flavor, buttery aroma) and two emotional responses (satisfied, dissatisfied) were significant. Microbiological analyses complied with the safety standards established by ANVISA and EFSA. The protein content of JFCF was 41.25 g/100 g, with 9.01 g/100 g of dietary fiber, while in the biscuit’s protein ranged from 7.87 to 11.37 g/100 g and fiber from 4.38 to 5.26 g/100 g. Protein digestibility was 40% in JFCF and ranged from 43% to 69% in the biscuits. The predominant fatty acids in JFCF and biscuits were palmitic, stearic, and oleic acids. Overall, nutritional messages were more effective in increasing acceptance and purchase intention, while reducing the perception of undesirable attributes in biscuits. Safety and sustainability messages warrant further investigation in insect-based products. The biscuits demonstrated technological feasibility. | en |
