| dc.description.abstract | A crescente demanda por produtos panificados sem glúten, motivada tanto pelo aumento do diagnóstico da doença celíaca quanto pelo consumo por indivíduos não celíacos, tem impulsionado a necessidade de formulações nutricionalmente superiores e tecnologicamente estáveis. Nesta tese, investigou-se a aplicação da farinha integral de milheto como ingrediente- chave para o desenvolvimento de pães sem glúten, integrando avaliação teórica, físico-química e sensorial. No Capítulo 1, realizou-se uma revisão abrangente sobre desafios nutricionais e tecnológicos na panificação sem glúten, destacando o papel central da escolha das matérias- primas, da engenharia do tamanho de partícula e da estruturação alternativa da massa por meio da interação entre amido, proteínas vegetais, fibras e hidrocoloides. O Capítulo 2 apresenta estudo experimental no qual farinhas integrais de milheto foram utilizadas para aprimorar características tecnológicas e sensoriais de pães sem glúten. As formulações com milheto demonstraram melhorias na composição nutricional, maior teor de fibras e compostos bioativos, desempenho físico-químico favorável, além de incremento estrutural, refletido em melhor volume específico, textura equilibrada e miolo mais homogêneo quando comparadas às formulações tradicionais. No Capítulo 3, procede-se à avaliação sensorial dos pães desenvolvidos, considerando aceitabilidade, atributos descritivos, drivers of liking e preferências do consumidor, com foco em como propriedades físico-químicas influenciam a percepção sensorial. | dc.description.abstractOther | The growing demand for gluten-free baked goods, driven by both the increase in celiac disease diagnoses and consumption by non-celiac individuals, has fueled the need for nutritionally superior and technologically stable formulations. This thesis investigated the application of whole millet flour as a key ingredient for the development of gluten-free breads, integrating theoretical, physicochemical, and sensory evaluation. Chapter 1 presents a comprehensive review of nutritional and technological challenges in gluten-free breadmaking, highlighting the central role of raw material selection, particle size engineering, and alternative dough structuring through the interaction between starch, vegetable proteins, fibers, and hydrocolloids. Chapter 2 presents an experimental study in which whole millet flours were used to improve the technological and sensory characteristics of gluten-free breads. Millet-based formulations demonstrated improvements in nutritional composition, higher fiber and bioactive compound content, favorable physicochemical performance, and structural enhancement, reflected in better specific volume, balanced texture, and a more homogeneous crumb when compared to traditional formulations. Chapter 3 presents a sensory evaluation of the developed breads, considering acceptability, descriptive attributes, drivers of liking, and consumer preferences, focusing on how physicochemical properties influence sensory perception.
