dc.description.abstract | O descarte no meio ambiente de grande volume de embalagens plásticas de difícil degradação, utilizadas para embalar alimentos, bem como o descarte inadequado de resíduos agroindustriais têm recebido atenção em relação a poluição ambiental. Neste sentido, novos materiais, de base biológica, têm sido estudados e propostos na tentativa de minimizar estes efeitos. Os biopolímeros podem ser obtidos de fontes vegetais, sendo os coprodutos da indústria de alimentos potenciais matérias-primas para esta aplicação. Diante disso, o objetivo deste estudo foi desenvolver filmes como materiais de embalagem para aplicação em alimentos à base de coprodutos resultantes do processamento agroindustrial de banana Prata. Com isso, visa o fornecimento de soluções a problemas ambientais, tanto pela disponibilização de um novo material de embalagem como alternativa às matérias-primas fósseis, quanto pela valorização destes coprodutos e adequação de sua disposição frente ao ambiente. Para tanto foram utilizados os frutos de banana prata adquiridos em comércio local com grau padronizado de maturação e suas cascas foram preparadas de forma úmida e também secas em condições de temperaturas controladas. O desenvolvimento dos filmes procederam pelo método “casting”. Foram testadas formulações para a produção de filmes biopolimérico de embalagem à base de cascas úmidas e secas, tendo sido incorporado glicerol para melhorar a plastificação. Para conhecimento de suas características, os coprodutos foram averiguados quanto ao seu perfil de umidade, atividade de água, acidez, pH, além da atividade antimicrobiana. Os filmes devidamente formados foram caracterizados também quanto a sua atividade antimicrobiana, além da espessura e aspecto visual. Com isso, concluiu-se que o estudo foi de grande importância para disponibilizar novos filmes biopoliméricos naturalmente antimicrobianos como materiais de embalagem, provenientes de fonte renovável como alternativas a matérias-primas fósseis e à valorização de coprodutos agroindustriais. Ele também alcançou destacada relevância por poder fornecer soluções a problemas ambientais e à conservação de alimentos com minimização da adição de aditivos químicos em alimentos, apresentando assim viés social, sanitário e ambiental. | pt_BR |

dc.description.abstractOther | Disposal into the environment of a large volume of plastic packaging that is difficult to degrade, used to package food, as well as the improper disposal of agro-industrial waste has received attention for causing environmental pollution. In this sense, new biologically-based materials have been studied and proposed in an attempt to minimize these effects. Biopolymers can be obtained from plant sources, and by-products from the food industry are potential raw materials for this application. Therefore, the objective of this study was to develop films as packaging materials for application in food based on by-products resulting from the agro-industrial processing of Prata bananas. With this, it aims to provide solutions to environmental problems, both by providing a new packaging material as an alternative to fossil raw materials, and by valuing these co-products and adapting their disposal to the environment. For this purpose, the banana silver fruits acquired in local commerce with a standardized degree of maturation were used and their peels were prepared in a wet and also dried way under controlled temperature conditions. The development of the films proceeded by the “casting” method. Formulations were tested for the production of biopolymeric packaging films based on wet and dry shells, with glycerol being incorporated to improve plasticization. In order to know their characteristics, the co-products were investigated regarding their moisture profile, water activity, acidity, pH, in addition to their antimicrobial activity. The properly formed films were characterized as to their antimicrobian activity, thickness and visual appearance. With this, it was concluded that the study was of great importance to provide new biopolymeric films naturally antimicrobial as packaging materials, from renewable sources as alternatives to fossil raw materials and the valorization of agro- industrial by-products. It also achieved outstanding relevance for being able to provide solutions to environmental problems and food conservation by minimizing the addition of chemical additives to food, thus presenting a social, health and environmental bias. | en |
