| dc.description.abstract | A massa alimentícia integral sem glúten é ótima opção para as principais refeições de indivíduos portadores da doença celíaca e também para aqueles que optam por estes produtos com propósitos de saudabilidade e diversificação da dieta. O milheto é um cereal com altos teores de fibras alimentares, minerais, lipídeos, proteínas e ainda é isento de glúten, sendo uma interessante opção de alimento para celíacos. Porém, como os demais cereais, ele possui deficiência de certos aminoácidos. O enriquecimento de produtos à base de cereais com farinha de leguminosas tem vantagens nutricionais, notoriamente a de melhorar o balanço de aminoácidos. O grão-de-bico é uma opção altamente desejável, como fonte proteíca vegetal e funcionalidade tecnológica em mistura com cereal, já que contribui para melhoria do aspecto nutricional. Assim, o objetivo deste trabalho foi desenvolver uma massa alimentícia gluten-free adicionada da enzima transglutaminase, utilizando a tecnologia de extrusão para cozimento e formação do produto. Utilizou-se a metodologia de superfície de resposta para se obter modelos matemáticos preditivos para as propriedades estudadas e desenvolveu-se um delineamento fatorial 22 com três pontos centrais a fim de se avaliar os efeitos dos diferentes percentuais de farinha integral de milheto em mistura com farinha integral de grão-de-bico em três proporções: 30:70, 70:30 e 50:50 e umidade de processamento na extrusão (20, 35 e 50%) para obtenção das farinhas précozidas, avaliando a composição centesimal, as propriedades físicas (granulometria índice de solubilidade em água (ISA), índice de absorção de água (IAA) e viscosidade de pasta) e de qualidade das massas (teste de cozimento e textura). Com o objetivo de se escolher a melhor proporção de farinhas e processamento de extrusão, foi aplicada a função desejabilidade e com o resultadoforam realizados novos ensaios em que foi estudado o efeito da adição da enzima transglutaminase (Tgase), utilizando-se da mesma metodologia de superfície de resposta para se obter modelos matemáticos preditivos para as propriedades estudadas com um delineamento fatorial 22 com três pontos centrais para avaliar os efeitos dos diferentes percentuais de Tgase (0,5, 1,25 e 2%) e tempo de incubação (15, 35 e 45 min). Concluiu-se que, a elaboração de massas alimentícias pré-cozidas à base de milheto e grão-de- bico apresentou bons resultados no tempo de cozimento, no peso e no volume (3 min, 100%, 100%, respectivamente). A continuidade do estudo avaliando outras variáveis do processamento da extrusão juntamente com ingredientes que ajudem a fortalecer e mimetizar a rede de gluten, tornará possivel obter características químicas, físicas, tecnológicas que atendam ao padrão comercial. Sob o ponto de vista nutricional, massas alimentícias com farinha milheto e grão-de-bico obtiveram qualidade nutricional, destacando o teor de proteína acima de 11% nas formulações. A granulometria das matérias primas foi adequada, promovendo uniformidade na massa. O uso da enzima transglutaminase exerceu pouco efeito na massa alimentícia. | pt_BR |

| dc.description.abstractOther | Gluten-free whole-grain pasta is a great option for the main meals of individuals with celiac disease and, for those who opt for these products for health purposes and diet diversification. Millet is a cereal with high levels of dietary fiber, minerals, lipids, proteins and is also gluten-free, making it an interesting food option for celiacs. However, like other cereals, it lacks certain amino acids. The enrichment of cereal-based products with legume flour has nutritional advantages, notably that of improving the balance of amino acids. Chickpeas are a highly desirable option, as a source of vegetable protein and technological functionality in a mixture with cereal, as it contributes to improving the nutritional aspect. Thus, the objective of this work was to develop a gluten-free pasta added with the transglutaminase enzyme, using extrusion technology for cooking and forming. The response surface methodology was used to obtain predictive mathematical models for the studied properties and a 22 factorial design with three central points was developed in order to evaluate the effects of different percentages of whole millet flour mixed with flour whole grain chickpea in three proportions: 30:70, 70:30 and 50:50 and processing moisture in extrusion (20, 35 and 50%) to obtain pre-cooked flours, in centesimal composition, physical properties (granulometry, index of water solubility – ISA, water absorption index – WAI, paste viscosity) and pasta quality (cooking and texture test). With the aim of choosing the best proportion of flours and extrusion processing, the desirability function was applied and, as a result, new tests were carried out in which the effect of adding the enzyme transglutaminase (Tgase) was studied, using the same methodology of response surface to obtain predictive mathematical models for the studied properties with a 22 factorial design with three central points to evaluate the effects of different percentages of Tgase (0.5, 1.25 and 2%) and incubation time (15, 35 and 45 min). It was concluded that the preparation of pre-cooked pasta based on millet and chickpeas showed good results in terms of cooking time, weight and volume (3 min, 100%, 100%, respectively). The continuation of the study evaluating other variables of the extrusion processing along with ingredients that help to strengthen and mimic the gluten network, will make it possible to obtain chemical, physical and technological characteristics that meet the commercial standard. From a nutritional point of view, the preparation of pasta with millet and chickpea flour made it possible to obtain pasta with nutritional quality, highlighting the protein content above 11% in the formulations. The granulometry of the raw materials was adequate, promoting uniformity in the mass. The use of the transglutaminase enzyme had little effect on the texture of the pasta. | en |
