| dc.description.abstract | O sabugo de milho ( Zea Mays ), cultivar Swan foi transformado em farinha e caracterizado quimicamente através da análises de umidade, proteína, cinzas, extrato etéreo, carboidratos e fibra total, para ser utilizado como fonte de fibra na alimentação humana. O produto final obtido foi usado no preparo de biscoitos com alto teor de fibra, com a finalidade de destiná-los para deita de indivíduos com distúrbios no trato gastro - Intestinal. As formulações continham 20%, 30% e 40% de farinha de sabugo de milho, resultando em biscoitos com teor em fibra da dieta de 6,4%, 7,7% e 9,6% respectivamente. Realizou-se ensaio biológico com ratos da linhagem Wistar (Rattus Norvepcus; var. Albinus; Rodentia MAMMALIA ), onde obteve-se coeficiente de eficácia protéica ( PER ) 1,34, 0,57, 0,40, e 0,95; coeficiente de eficácia alimentar ( CEA ) 0,14, 0,60, 0,40, e 0,10; e coeficiente de digestibilidade aparente ( Cda ) 99,23%, 98,10%, 99,76% e 99,48%, p’ara’ as dietas que continham 0,10%, 10,51%, 15,30% e 17,33% de fibra da dieta respectivamente. Foi efetuado o estudo histopatológico do intestino grosso e delgado dos ratos, para comparação com os valores da literatura sobre alterações teciduais a nível de vilosidade intestinal. Foi concluído que a farinha de sabugo de milho, pode ser utilizada com bons resultados sobre o produto final, de acordo com a quantidade utilizada. O produto final de melhor aceitação foi o que continha 20% da farinha de sabugo de milho com relação a farinha de complementação que foi a farinha de milho. Os biscoitos foram testados sensorialmente, primeiro, com o objetivo de obter- se atributos e, segundo, para se verificar qual das três formulações feitas teriam uma melhor aceitação. O ensaio biológico apresentou um resultado indicando aumento de vilosidade, além de ser comprovado o aumento do bolo fecal de acordo com o aumento de fibra da dieta. | pt_BR |

| dc.description.abstractOther | Comcob (Zea mays), variety Swan was ground and transformed in a that might be used as source of dietary fiber for human consumption. Chemical composition was obtained through the following analysis: moisture, proteins, ash, lipids, carbohydrates and total dietary fiber. The flour was then added to other food ingredients to prepare biscuits whith high dietary fiber contents, to be consumed by people affected by gastrointestinal disturbs. The formulations contained 20%, 30% and 40% of the comcob flour, resulting in the biscuits whith 6,40%, 7,70% and 9,60% of dietary fiber respectively. A comparative study was conducted through sensorial tests to verify the acceptability ofthe formuled biscuits. It was also performed a biological assay with Wistar rats (Rattus norvejicus; var. Albinus; Rodentia (MAMMALIA) with the main objective of determining protein efficiency ratio (PER), alimentary effeciency coeficient (CEA) and apparent digestibily coeficient (Cda). Histopatlogic observations of the rats large and small intestines were conducted to compare the results obtained in this research for villosity to literature values. It was concluded that the comcob, in appropriated quantities , may be utilized to obtain food products. The biscuits with the better acceptance was the one containg 20% of comcob flour. The results of the biological assay presented na increase in villosity; besides; it was verified sediments increases for higher dietary fiber contents. | en |
