dc.description.abstractCom o objetivo de se avaliar a qualidade microbiológica, no que diz respeito à. Saúde Pública, de alguns produtos de laticínio encontrados.no comércio do Rio de Janeiro, foram analisadas 30 amostras de leite pasteurizado tipo "C", 30 de leite em pó integral e 30 de creme de leite, no período de 24/ 7/78 e 30/7/79. Foram realizados: contagem (NMP) de coliformes totais e fecais, pesquisa deEscherichia Coli enteropatogênica, pesquisa de Salmonella , contagem de Staphilococus aureos e de Bacillus cereus. Comparando-se os resultados obtidos com os padrões mi crobiológicos do Ministério da Saúde e do Ministério da Agricultura, observou-se que: a) o leite pasteurizado tipo "C" apresentou-se fora dos padrões estabelecidos para coliformes totais em 60% de suas amostras e fecais em 40%. S. auKetU coagulase positivo foi encontrado em 57% das amostras e B. ee.Ke.iU em 63%; 87 b) i *1 e em põ apresentou-se fora dos padrões es tabelecidos para coliformes totais (10%) e fecais (7%). A con taminação por B. ce/teiu foi bem alta-(80%); das amostras; c) o creme de leite apresentou—se fora dos padrões estabelecidos para, coliformes fecais (13% das amostras) e pa ra S. au4.e.ttó coagulase positivo (17%); d) quatro biotipos enteropatogênicos de E. co£-í fo ram encontrados: 018 (em leite pasteurizado), 026:K60; 0111: K58 e 0119 :K69 (em creme de leite); e) Salmone.lla. não for isolada em nenhum dos produ tos analisados. De um modo geral, o produto que requer maior aten- ção, por parte da fiscalizaçao, é o leite pasteurizado tipo "C".pt_BR

dc.description.abstractOtherThe following were performed: total and fecal coliform counts (MPN), screening for enteropathogenic Escherichia coli, screening for Salmonella, and counts of Staphylococcus aureus and Bacillus cereus. Comparing the obtained results with the microbiological standards of the Ministry of Health and the Ministry of Agriculture, it was observed that: a) type 'C' pasteurized milk was outside the established standards for total coliforms in 60% of its samples and for fecal coliforms in 40%. Coagulase-positive S. aureus was found in 57% of the samples and B. cereus in 63%; b) powdered milk was outside the established standards for total coliforms (10%) and fecal coliforms (7%). Contamination by B. cereus was very high (80% of the samples); c) heavy cream was outside the established standards for fecal coliforms (13% of the samples) and for coagulase-positive S. aureus (17%); d) four enteropathogenic biotypes of E. coli were found: O18 (in pasteurized milk), O26:K60, O111:K58, and O119:K69 (in heavy cream); e) Salmonella was not isolated in any of the analyzed products. In general, the product that requires the most attention from inspection authorities is type 'C' pasteurized milken
