| dc.description.abstract | O objetivo deste trabalho foi estudar o comportamento do suco de limão integral e não processado, estocado à 5°C e 30 °C, com diferentes concentrações de SOz, quanto as modificaç&es nas suas características físico - químicas, oriundas ou não de escurecimento enzimático e não enzimático, que prejudicariam sua qualidade, para possível elaboração de refrigerantes. O suco foi tratado com metabissulfito de sódio, como a- gente sulfitante, em concentrações de 0, 500, 1000 e 1500 ppm de SOz total, sendo as amostras estocadas à 30 °C, 5°C e -20 °C (contro- le) . As análises para avaliação das mudanças físico - químicas na amostra conservada à 30°C, foram realizadas em período de 33 di- as, enquanto que o suco conservado à 5°C foi avaliado por 90 dias. Os parâmetros considerados na avaliação da qualidade do suco foram : SOz total e livre, ácido ascórbico, pH, sólidos solu- veis, acidez total, açúcares redutores e não redutores, densidade, cor e sensorial. As amostras conservadas à 30 °C, adicionadas de agente sulfitante, apresentaram poucas mudanças em suas características físico-químicas, exceto pela grande perda do teor de ácido ascórbi- co. Não foi detectado, instrumentalmente, início de escurecimento. A amostra sem adição de agente sulfitante,- não suportou esta tempe- ratura de estocagem e apresentou contaminação microbiologica e ini- cio de escurecimento, após quatro dias. As amostras conservadas a 5°C e adicionadas de agente sulfitante apresentaram poucas mudanças em suas características fi- sico-químicas, havendo também, grande perda de ácido ascórbico, não sendo detectado início de escurecimento. A amostra sem adição de a- gente sulfitante suportou esta condição de estocagem com poucas mu- danças em suas características físico - químicas, ocorrendo também grande perda de ácido ascórbico, sendo observado início de escure- cimento. O suco foi testado sensorialmente em um refrigerante de limão, sendo usadas as amostras conservadas à 30 °C, 5°C e -20°C (padrão), em diferentes tempos de armazenamento. As amostras contendo suco de limão com SOz indicaram sig- nificante diferença em relação' ao padrão, pois o sulfito já e per— cebido na mais baixa concentração (500 ppm). Entretanto, as amos- tras conservadas com SOz, não apresentaram nota oxidada, o que foi observada no padrão. Em vista dos resultados obtidos, pode-se afirmar que o suco de limão integral, quando adicionado de 500 ppm de SO2, mante- rá suas características, desde que seja estocado à 30°C por 33 di- as ou 90 dias, quando estocado à 5°C. | pt_BR |

| dc.description.abstractOther | This study dealth with the behaviour of single-strength lemon juice stored at 30 and 5°C, added of different concentrations of sulphur dioxide, related with the changes in their physical-che- mical characteristics, due to enzymatic or nonenzymatic browning, for use in lemon soft drinks. The juice was added of sodium metabisulfite at 0, 500, 1000 e 1500 ppm total sulphur dioxide, then stored at 30°C, 5°C and -20°C (control). Analyses for evaluation of physical - Chemical changes in the Products stored at 30°C were carried out up to 33 days, while those stored at 5°C were analysed for 90 days. The following analyses were perfomed: total and free sul- fur dioxide, ascorbic acid, total and reducing sugars, soluble so- lida, pH, colour and sensory analysis. The samples stored at 30°C and added of sulphur dioxide, xiv evidenced no changes in all parameter, except for ascorbic acid loss. No browning was obserded by instrumental measurements. Samples without addition sulfiting agent did not support storage temperature and evidenced microbiological contamination and beginning of browning after four days. The products stored at 5°C added ‘of sulphur dioxide show- ed little changes in physical-chemical characteristics, in spite of ascorbic acid losses. Beginning of the browning was not evidenced at this condition. Samples without sulfiting agent stood this sto- rage conditions with little changes in their physical-chemical cha- racteristics and loss of ascorbic acid. However, beginning of brow- ning was observed. Sensory evaluation was carried out in soft-drink prepared with the samples stored at 30 °C, 5°C and -20°C (control) at diffe- rents storage times. Samples added of sulphur dioxide evidenced significant difference in relation to the Standard. Sulphite was already per- ceived, even at lowest concentration of sulphur dioxide (500 ppm). Samples prepared with lemon juice added of sulphur dioxi- de did not evidence oxidized notes, wich were perceived in the con- trol sample. From the results obtained it is possible to afirm that XV the single-strenght lemon juice added with 500 ppm of sulphur dio- xide will be able to keep its characteristics as long as stored at 30°C for 33 days or 90 days whén stored at 5°C. | en |
