| pt_BR |

| dc.description.abstractOther | The dairy production chain faces significant challenges related to maintaining milk quality and reducing losses throughout production and distribution. In this context, the development of biodegradable intelligent packaging capable of monitoring food quality in real time has emerged as a promising strategy to improve food safety and minimize waste. Therefore, this study aimed to optimize and characterize biodegradable intelligent films incorporated with freeze-dried purple-fleshed sweet potato powder (Ipomoea batatas (L.) Lam.) for application as colorimetric pH indicators for bovine and goat milk. The freeze-dried powder was characterized in terms of chemical composition, anthocyanin content, and colorimetric response under different pH conditions. Subsequently, biodegradable films were produced using starch, carboxymethyl cellulose, glycerol, and different concentrations of purple-fleshed sweet potato powder. Their mechanical, optical, thermal, spectroscopic, and biodegradation properties were evaluated. The freeze-dried powder contained 84.88% carbohydrates, 1.97% ash, 5.32% moisture, and 31.20 mg 100 g−1 of monomeric anthocyanins, exhibiting a broad colorimetric response over the pH range from 1 to 11. The incorporation of purple-fleshed sweet potato powder reduced film lightness, increased color intensity, and promoted visible color changes from pink to green in response to pH variations. FTIR analysis indicated that the addition of the powder did not compromise the chemical structure of the polymeric matrix, while soil burial tests confirmed the rapid biodegradation of the developed films. In the practical application, the films successfully differentiated bovine and goat milk samples with different pH values, including milk from healthy animals and animals with mastitis, demonstrating their potential for the visual monitoring of milk quality. Overall, the developed films exhibited suitable properties for application as biodegradable intelligent packaging, representing a sustainable alternative for monitoring the freshness and quality of dairy products. | en |
